Cheesy Baked Potatoes

Crispy skins, fluffy centers, and gooey cheese — the ultimate comfort food side!

Ingredients:

  • 10 medium russet potatoes, scrubbed and pricked with a fork
  • ½ cup butter, melted
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped fresh parsley
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Bake potatoes in a baking dish for 1 hour, or until fork-tender.
  3. While baking, melt butter in a saucepan over low heat. Stir in sour cream and cheddar until smooth.
  4. Slice each baked potato lengthwise to create an opening.
  5. Spoon cheese mixture into each potato and sprinkle with parsley, salt, and pepper.
  6. Return potatoes to the oven for 5–10 minutes, until the cheese is bubbly.
